The Magic of Cooking Low and Slow

Barbecue is sometimes confused with simply grilling meat.

They are not the same thing.

Grilling usually means cooking relatively quickly over direct heat. Barbecue, in its classic American form, relies on lower temperatures and much longer cooking times.

Carolina Barbecue: Pork and Vinegar

Travel east and the rules change.

In parts of the Carolinas, barbecue traditionally means pork.

Memphis barbecue is strongly associated with pork ribs and pulled pork.

Ribs may be served “wet,” coated with sauce, or “dry,” where a spice mixture creates the main flavour on the surface.

The meat should be tender but not so soft that it completely falls away before you bite it.

Smoke should be noticeable without making everything taste bitter.

Spices should complement the pork rather than overwhelm it.

Kansas City's famous burnt ends originally came from the heavily cooked edges of brisket.

What was once considered a leftover or less desirable portion eventually became a prized barbecue item.

Enslaved Black cooks and later generations of African American pitmasters played a central role in developing and spreading Southern barbecue traditions.

That history is important because food often carries stories that restaurant menus do not explain.

Barbecue became part of community gatherings, celebrations, political events, family traditions and local identities.

Eventually it travelled far beyond the American South.

Why Barbecue Represents America So Well

Calling one food the “best” cuisine of a huge country is obviously subjective.

America also gave the world regional foods such as Cajun and Creole cooking, New York pizza, Southern fried chicken, cheeseburgers, Tex-Mex and countless immigrant-influenced dishes.

But barbecue deserves a special place.

It combines different cultures.

It changes from state to state.

It turns simple ingredients into something memorable.

And above all, it encourages people to gather.

Barbecue rarely feels like food designed to be eaten quietly and quickly.

It belongs on long tables.

With friends.

With family.

With too many napkins.

And perhaps with an argument about which state does it best.

There may never be a final answer to that question.

Fortunately, tasting your way through Texas, the Carolinas, Memphis and Kansas City sounds like a much better solution than trying to settle it.
