India is one of those countries where travelling a few hundred kilometres can completely change what appears on your plate.

The spices change. The cooking oils change. Rice replaces wheat. Coconut replaces butter. Fish becomes more important than meat. In another region, ingredients that most people have never heard of become part of everyday meals.

That is why calling something simply “Indian food” barely describes what the country actually eats.

Here are five states and five dishes that capture something distinctive about their food culture.

Punjab — Amritsari Kulcha with Chole

Few breakfasts announce themselves as confidently as a plate of Amritsari kulcha.

The kulcha arrives straight from the tandoor, blistered and slightly crisp outside but soft within. Break it open and you find a spiced filling, often made with potato, onion, paneer or cauliflower.

Then comes the butter.

A generous amount is spread across the hot bread until it begins disappearing into the surface.

Beside it sits a bowl of spicy chole, usually accompanied by onions and tangy chutney.

The proper way to eat it is also the simplest: tear the kulcha with your fingers, scoop up some chickpeas and gravy, and eat everything together.

It is rich, messy and incredibly satisfying.

Punjab is famous for hearty food, and Amritsari kulcha represents that personality perfectly. It doesn't try to be delicate. It arrives on the plate expecting you to be hungry.

And somehow, eating it in a busy little shop in Amritsar always seems better than eating the same dish anywhere else.

Rajasthan — Dal Baati Churma

If Punjab gives us the tandoor, Rajasthan gives us one of India's cleverest combinations: dal baati churma.

The meal consists of three very different elements.

Baati is a firm, baked ball of wheat dough. Dal provides the spicy, comforting lentil gravy that the baati absorbs after being broken apart. Churma turns similar wheat preparations into something sweet by crushing them and mixing them with ghee and sugar or jaggery.

And yes, there is a lot of ghee involved.

That is part of the experience.

Rajasthani cuisine developed in a region where water scarcity historically influenced the way people cooked. Foods that required less water and could remain edible for longer naturally became valuable.

Baati fits beautifully into that environment.

Today, however, what may once have been practical food has become a celebratory meal.

A plate of crushed baati drenched in dal and ghee, followed by sweet churma, feels less like survival food and more like Rajasthan insisting that nobody should leave the table hungry.

West Bengal — Macher Jhol with Rice

Ask someone unfamiliar with Bengali cuisine to name a Bengali food and they may immediately think of rasgulla.

But if you want to understand everyday Bengali eating, look towards fish and rice.

Macher jhol is not a single rigid recipe. Different households prepare fish curry differently, using changing combinations of potatoes, tomatoes, mustard, turmeric, chillies and spices.

That flexibility is precisely what makes it special.

A plate of steaming rice with freshly prepared fish curry does not need elaborate presentation.

The rice absorbs the thin, flavourful gravy while the fish remains the centre of the meal.

Bengal's rivers, ponds and wetlands have helped make fish deeply important to its cuisine. Varieties such as rohu, katla, hilsa and others appear in countless preparations.

Macher jhol therefore feels less like a restaurant speciality and more like home.

It is the sort of dish whose “best version” is often the one someone remembers their mother or grandmother making.

Tamil Nadu — Chettinad Chicken

Chettinad chicken does not enter quietly.

The first thing you notice is the aroma.

Pepper, chillies, coriander, cumin, fennel and other spices combine into a dark, intense masala that coats the chicken.

The dish comes from the Chettinad region of Tamil Nadu, whose cuisine is famous for bold spice blends and carefully roasted ingredients.

What makes good Chettinad chicken interesting is that it isn't simply hot.

There is depth behind the heat.

Roasting whole spices before grinding them releases oils and aromas that packaged spice powders cannot quite reproduce. Pepper often provides a sharp warmth, while curry leaves and other aromatics give the dish its distinctly South Indian character.

Pair it with rice, dosa, appam or parotta and the result changes again.

For anyone whose idea of South Indian food begins and ends with idli and dosa, Chettinad cuisine can be a revelation.

Assam — Khar with Rice

Of these five dishes, Khar is probably the one many Indians outside the Northeast are least familiar with.

That is exactly why it deserves attention.

Khar refers both to a distinctive alkaline ingredient traditionally prepared from certain plant ashes and to dishes made using it. One traditional method involves using the dried peel of a particular banana variety, burning it and filtering water through the ash.

The resulting alkaline liquid gives Assamese Khar preparations a taste unlike the spice-heavy gravies associated with many other Indian cuisines.

Khar may be prepared with ingredients such as raw papaya, pulses or other vegetables and is commonly eaten with rice.

The dish demonstrates something important about Assamese food: not every memorable flavour needs to come from enormous quantities of chilli, cream or masala.

Sometimes an unfamiliar cooking technique is enough to create an entirely different culinary identity.

Five Plates, Five Different Indias

Put these five meals beside one another and it becomes difficult to describe Indian cuisine as a single thing.

Punjab gives you wheat, tandoor smoke and butter.

Rajasthan transforms simple ingredients into a rich meal suited to its environment.

Bengal builds comfort around fish and rice.

Tamil Nadu shows what carefully roasted spices can do.

Assam introduces flavours and techniques many people elsewhere in India may never have encountered.

And these are only five states.

Travel farther and the food changes again.

That may be the best thing about eating your way across India.

You never really finish discovering Indian food.

You simply reach the next state—and start again.
